For me the most crucial part of this dish is using the best quality of olive oil you can find/afford, it completely changes the flavor of the dish, once you switch out your low quality olive oil for a good one you will never go back. As a rule of thumb I always try to find a bottle that's harvested and bottled in Spain, as this tend to be the most reliable method to find a good olive oil. Now let's get started!

  • 1 small eggplant, diced

  • 4 small zucchinis, diced

  • 1 small red bell pepper, diced

  • 1 small yellow bell pepper, diced

  • 1 small green bell pepper, diced

  • 1 small red onion, diced

  • 1 tablespoon olive oil (and more to drizzle)

  • 1 teaspoon dried oregano

  • 1 clove of garlic minced

  • 1 tbsp of balsamic vinegar

  • Salt and pepper to taste

  • A pinch of paprika (sweet or spicy)

  • 1/2 cup hummus (store-bought or homemade)

  • 4-6 pita bread slices, cut into wedges

Ingredients

1. To start, preheat the oven to 400°F (200°C). Then line a baking sheet with parchment paper for easy cleanup.

2. To prep the vegetables, slice the eggplant, all the bell peppers, zucchini, and red onion into finely or largely diced pieces based on your taste. Then place everything in a large mixing bowl.

3. Drizzle the vegetables with olive oil, then sprinkle with the dried oregano, finely minced garlic, salt, and pepper to taste. Next, toss everything together until the vegetables are well-coated.

4. Now, spread the seasoned vegetables evenly on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the veggies are tender, browned and slightly caramelized.

5. While the vegetables are roasting, slice the pita bread into wedges. You can either warm the pita in the oven for a few minutes, toast it in the toaster, or toast it lightly in a pan until golden and crispy.

6. Once the vegetables are roasted, arrange them in a circle on a serving plate, leaving space in the center for the hummus. Spoon the hummus into the center of the plate. Then drizzle olive oil on top of the hummus to your taste along with a pinch of paprika,

7. Place the warm pita wedges around the hummus and vegetables. Serve immediately, and enjoy this vibrant and healthy Mediterranean-inspired dish. You can serve this as a lunch dish, snack, or appetizer for dinner.
