Ingredients
1 bar of 100% unsweetened chocolate
3 tbsp of honey or maple syrup
1/4 cup coconut milk
1/4 cup of almond or hazelnut butter
1/4 tsp vanilla extract
Coconut shreds
A pinch of sea salt
Instructions
1. Break the chocolate bar into small pieces and place it in a heatproof bowl. Melt it using a double boiler or microwave (in 20-30 second intervals, stirring in between until smooth).
2. In a separate bowl, mix together the coconut milk, almond or hazelnut butter, and honey or maple syrup until smooth and well-combined.
3. Once the chocolate is fully melted, add the wet mixture to the chocolate. Stir in the vanilla extract and a pinch of sea salt. Stir until everything is fully incorporated and smooth.
4. Pour the chocolate mixture into a shallow dish and refrigerate for about 30-60 minutes, or until it firms up enough to roll into balls.
5. Once the mixture is firm enough, scoop out small amounts and roll them into balls using your hands.
6. Roll each truffle in coconut shreds until fully coated.
7. Place the truffles on a parchment-lined tray and refrigerate them for another 30 minutes to set.
